Happy Almond Roca Day! Today is the first of December, and thereby, Almond Roca Day.

Let me explain: Grandma Millie practically raised me on homemade Almond Roca, and this delectable treat has become the Christmas mascot of my home. I make it only during the month of December, and today I'll make the inaugural batch of 2017. Therefore, today is Almond Roca Day. This dessert brings so much delight to my husband and children, they've even composed an Almond Roca song.

I administer Almond Roca to the children via the Christmas House Advent Calendar, pictured above. My mom gave me this special gift 10 years ago. There is a wooden door and a cavity for each day leading up to Christmas. I tuck 3 pieces behind the door of the day—one chunk per child, to countdown to Christmas; not a bad life.
